Spring Grain Salad

Ingredients

  1. Two 8.5-ounce pouches microwavable mixed grains, cooked and cooled
  2. 1 cup crumbled goat cheese
  3. 1 cup frozen peas, thawed
  4. 1 cup cherry tomatoes, halved
  5. 1/2 cup sliced radishes
  6. 1/4 cup toasted pine nuts
  7. 2 scallions, sliced thin
  8. Lemon and garlic dressing (store-bought)
  9. 3 cups arugula
  10. 1/4 cup chopped fresh parsley

Instructions

  1. Add the cooked grains, goat cheese, peas, tomatoes, radishes, pine nuts and scallions to a large bowl. Add the dressing to taste, then toss to combine. Place the arugula on a large platter or serving bowl. Top with the grain salad, then garnish with the parsley and serve.

Great summer dish and so easy to make. I made the lemon garlic dressing because I forgot to buy it. The grain mixture goes so well with the arugula. I wouldn’t change a thing.

Really good! I added sliced blanched green beans, chopped spinach ( I put it in the Salad instead of serving on arugula), and grilled chicken. I had a bottle of Apricot Vinigrette that I used for the dressing.Served as a main dish along with some crusty bread

This salad is amazing!  I  made it for a girls outdoor get together and everyone loved it.  I’ve requested it for Mother’s Day.  You knocked this one out of the park Ree!

Used quinoa kale mix, and this is a winner! Made my own lemon vinaigrette and dressed the salad as we used it over a spinach arugula mix. Used up the last of it with leftover roasted chicken. Will be making this with variations often!

This was very good. I made the salad and let it sit in the fridge for an hour. I made a homemade lemon vinaigrette instead of using store bought. We paired it with grilled chicken. I will definitely make it again.

Usually love Ree’s stuff, no was excited about another healthy salad/dinner option, but this was just not good. The flavors didn’t seem to work together, the dressing seemed really overpowering, and it didn’t have much protein. I made it exactly according to the recipe. Sorry, Ree. Love you, it this isn’t a keeper.
