Smoky Arugula and Apple Salad

Ingredients

  1. 1 tablespoon whole-grain mustard
  2. 1 tablespoon apple cider vinegar
  3. 2 tablespoons extra-virgin olive oil
  4. Kosher salt
  5. 1 apple, such as Fuji or Pink Lady, halved and cored
  6. 5 ounces baby arugula
  7. 1/2 cup chopped smoked almonds
  8. 1/4 cup dry ricotta cheese (see Cook’s Note)

Instructions

  1. Whisk together the mustard and vinegar in a large bowl. Drizzle in the olive oil, whisking until the dressing is emulsified. Season with 1/4 teaspoon salt.
  2. Using a knife or mandoline, thinly slice the apple into half-moons. Add the apples to the dressing and toss to coat. Add the arugula, smoked almonds and 1/4 teaspoon salt; toss to coat. Dollop the ricotta over the top and serve immediately.

This salad is delicious, so easy to prepare, versatile and fool-proof… perfect for a holiday buffet! I made this for Thanksgiving family dinner yesterday. It ended up sitting (in a refrigerator) for several hours, all dressed and ready, yet it was still wonderful. It did compact a little, but it still looked and tasted awesome. This is a keeper!! My new favorite, especially for group events….. its just SO GOOD. 😀

This salad was delicious!  I found some Gravenstein apple cider vinegar from an oil and vinegar store for the dressing.  The arugula, apple, smoked almonds and goat’s cheese were perfect together.   Make sure you use the whole-grain mustard! Everyone I serve it to wants to make it.  I highly recommend!

This was so simple and delicious! I loved that it was a small salad since I have to eat the whole thing myself. I simply saved half the dressing for the next day and cut up the apple as I needed it. I used crumbled goat cheese- yum.
