Shaved Zucchini Salad

I’ve been making this salad for over 30 years, and in the summer it is always on the restaurant’s menu when zucchini is popping. Yellow squash will work great also. This is truly a keep it simple kind of dish.

Ingredients

  1. 1/3 cup sliced almonds
  2. 2 tablespoons apple cider vinegar
  3. 1/2 tablespoon pure maple syrup
  4. Juice of 1 lemon
  5. 1/2 cup extra-virgin olive oil
  6. Kosher salt and freshly ground black pepper
  7. 1 zucchini, thinly shaved lengthwise on a mandoline
  8. 1 summer squash, thinly shaved lengthwise on a mandoline
  9. One 15-ounce can cannellini beans, drained and rinsed
  10. 1/4 cup chopped fresh basil

Instructions

  1. Set up a grill for even medium-high heat by building the coals evenly on the bottom.
  2. Add the almonds to a cast-iron pan, shaking out into an even layer. Place on the grill and toast until golden brown and crisp, 3 to 5 minutes. Remove from the heat.
  3. In a mixing bowl, whisk together the vinegar, maple syrup and lemon juice. Stream in the olive oil while whisking constantly. Season with salt and pepper. Toss the zucchini, summer squash, almonds and cannellini beans with the vinaigrette. Add the basil and mix, tasting for seasoning and adding additional salt and pepper if needed. Serve!

This is delicious and so easy to make. I had yellow squash growing in the garden but had to pick up a zucchini. (Am I the only one who can’t grow zucchini ;p) I almost didn’t make the dressing because I have others but it is so good, it’s my new go-to. Don’t miss it! The sliced almonds gave it that added crunch while the beans made it creamy. Perfection on a fork! I will make this all summer!!
