Ingredients

  1. 10 ounces arugula leaves
  2. 2 oranges, segmented
  3. 1 small bulb fennel, thinly sliced
  4. 3 tablespoons olive oil
  5. 1 lemon, juiced
  6. Kosher salt and freshly ground black pepper

Instructions

  1. In a large bowl, combine the arugula, oranges and fennel. Add the olive oil and lemon juice and toss to combine. Season with salt and pepper.
  2. Serve immediately.
