Ingredients
- 1/2 cup lemon juice
- 2 tablespoons minced shallots
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1/2 cup extra-virgin olive oil
- Kosher salt and freshly cracked black pepper
- One 16-ounce bag shaved Brussels sprouts
- 1/4 cup chopped dates
- 1/4 cup diced manchego cheese
- 1/4 cup chopped almonds
Instructions
- In a small bowl, combine the lemon juice and shallots. Let stand 5 minutes, so the acidity in the lemon juice can begin to break down the shallots. Whisk in the Dijon and honey until well combined. Slowly whisk in the olive oil until emulsified. Season aggressively with salt and add pepper to taste.
- Add the sprouts, dates, manchego and almonds and toss to coat. The salad can be dressed 15 to 20 minutes in advance if you like more tender Brussels sprouts.

Excellent. Made a half order and ate it like a trough salad, so I know Katie would approve! Had to sub in dried cranberries, but I can tell I’ll be making this again and will try with dates.
Delicious, scrumptious and so easy to make. I did have to add a little bit of agave, needed to tone down the acidity. Also added dried cranberries and some crumbled bacon. Smashing combination of the fruit, Brussels sprouts and cheese, yum! Thank you Katie!

This was the hit of my thanksgiving table! And it was perfect because it didn’t need the stove or the oven. I prepped everything ahead of time and then mixed in the dressing 30min before dining. Perfect for a pot luck too.
My husband and I loved it. I am making it for a second time this week. I also mixed up my dried fruit from figs to the cranberries.

I shaved Brussels sprouts using the slicing tool Geoffrey K advertised, whew the leaves were flying over my counter. We loved the salad, dressing flavorful, although I could still taste shallots after dinner but it was worth the after taste. Will make again.
