Ingredients

  1. 2 chicken breasts, skinless and boneless
  2. 1 cup milk
  3. 1 cup flour
  4. vegetable oil
  5. cayenne pepper
  6. romaine lettuce, washed & dried
  7. Salt and pepper
  8. red onion, sliced
  9. 1 tablespoon mustard
  10. Dressing, recipe follows
  11. 1 garlic clove, smashed
  12. 1 tablespoon dijon mustard
  13. 3 tablespoons white wine vinegar
  14. 1/4 cup olive oil
  15. Salt and pepper

Instructions

  1. Place chicken between plastic wrap, and flatten with a mallet. In bowl season flour with cayenne, salt and pepper. In separate bowl combine mustard and milk. Dip chicken in milk. Dip chicken in flour. Add oil to a large skillet and heat. Add chicken and cook until firm and golden brown, about 3 minutes per side. On plate place lettuce and onion. Add chicken. Serve with dressing on side
  2. In small jar combine all ingredients. Shake to combine.
