Ingredients
- 3 cups mixed salad greens
- 8 whole romaine leaves
- 1 pint grape tomatoes, halved
- One 14-ounce can kidney beans, drained and rinsed
- One 4-ounce can pitted mixed olives
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 4 hard-boiled eggs, peeled and sliced
- 2 avocados, sliced
- 8 ounces mushrooms, sliced
- 8 ounces fresh mozzarella, cubed
- 1 English cucumber, halved then sliced
- 1 bunch asparagus, blanched and sliced into pieces
- 1/2 cup sunflower seeds
- 8 radishes, halved
- Salt and ground pepper

- Herby Ranch Dressing, recipe follows, or your favorite
- 1 cup (real) mayonnaise
- 1/2 cup buttermilk (more as needed to reach desired consistency)
- 1/2 cup sour cream
- 1/4 cup Italian flat-leaf parsley leaves, chopped
- 2 tablespoons chopped fresh chives
- 2 teaspoons chopped fresh oregano
- 3 teaspoons white vinegar
- 2 teaspoons Worcestershire sauce
- Salt and ground pepper
Instructions
- Lay out the greens and all the fixings in small dishes.
- Have a big stainless bowl with tongs. Have everyone build their own salad by throwing what they want into the bowl. Toss and tip the salad onto a cutting board. With 2 knives, quickly chop the salad so that it’s chopped into smaller pieces. Throw it back into the metal dish and toss with Herby Ranch Dressing.
- Transfer to a plate and sprinkle with a little salt and pepper.
- Combine the mayonnaise, buttermilk, sour cream, parsley, chives, oregano, vinegar, Worcestershire sauce and salt and pepper to taste in a bowl. Chill for a couple of hours before serving.

chopped salads are very good, we recently went on a cruise and they threw your chosen ingredients into a bowl and used a pizza cutter and ran it through instead of putting it on the cutting board and back into the bowl, just thought i would share that, it is easier but still tasty
I made this dressing for my boyfriend’s family a few weeks ago and they’re still raving about it! So fresh, great way to use up herbs from my garden. Loved it.
Great way to serve a salad, loved it …. changed the ingredients a little to suit my family, but mainly stayed with Ree’s selections. Used chic peas instead of kidney, no mushrooms or avocado (none on hand) and added walnuts as one of the sides. Served with a variety of dressings. Loved this because everyone can choose what they like in their salads…..delish!
The salad is great but I made the dressing according to the recipe and all it tasted like was mayonnaise
This is hands down the best way to make a salad, healthy and incredibly flavorful. Do exactly what she says and chop all of the ingredients including the dressing on the cutting board. I told friends about it and they acted like they were scared. “What? isn’t that messy?” So I know others are feeling the same way. I am telling you you will love it. It is like a flavor explosion in your mouth and you actually end up using less dressing then normal because the chopping infuses the dressing into every nook and cranny. And experiment – I have been adding nuts, jalapenos, raisins, blue cheese you name it! Thank you Ree, you brought the salad back!
This salad and dressing was soooo good. Made it for the hubby and me lastnight and he LOVED it and so did I. The only thing I changed was I added cilantro instead of parsley, I really dont care for it. But besides that it was awesome.
I’m a salad lover and had to make this one for dinner after watching the show. I changed up the salad ingredients a bit, substituting cheddar for mozzarella at my kids’ request and using garbanzo beans instead of kidney beans. I made the buttermilk ranch exactly as written and the herbs are so wonderful. The salad is fantastic and having so many different textures and flavors makes it a perfect meal. The dressing came out so flavorful and completely knocks bottled ranch out of the park. I will never buy bottled ranch again as this is such an easy recipe! Just make sure and use fresh herbs as opposed to dry. I think it makes a huge difference. I also made the rosemary focaccia and it, too, was superb. Easiest focaccia I’ve ever made and the most foolproof as well. Thanks Ree for another great meal!
