Ingredients
- 1/2 cup mayonnaise
- 2 tablespoons chopped fresh tarragon
- 1 teaspoon red wine vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly cracked black pepper
- Juice of 1 lemon (about 2 tablespoons)
- 1 cup cherry tomatoes, halved
- 6 toasted, buttered split-top potato buns, torn into hunks (see Cook’s Note)
- 4 slices bacon, cooked until crispy and crumbled
- 3 scallions, thinly sliced on a bias
- 2 ribs celery, thinly sliced
- 3/4 pound cooked lobster meat, chopped
- 1 ripe avocado, peeled and cubed
Instructions
- Mix together the mayonnaise, tarragon, vinegar, garlic powder, salt, pepper and lemon juice in a large bowl. Add the tomatoes, buns, bacon, scallions and celery to the dressing and toss to coat. Fold in the lobster and avocado. Serve immediately!

This is absolutely fabulous! Everyone loved it. I’ve even used Trader Joe’s frozen langoustines when in a pinch. Never know the difference.
Superb! For some buttery flavor, I toasted croissants in olive oil instead of using hot dog buns and fried up some prosciutto in olive oil instead of using bacon.
Made this but used shrimp. Delicious, lobster was way to expensive for family

The only personal tweaks I made were:
* tossed the avocado in lemon juice to keep them from browning
* used a French baguette instead of potato buns
* used the melted butter for the bread that was left from my butter poaching of the lobster to amp up the lobster flavor

A perfect blend of flavors brings out the very best of this dish. We enjoyed over a bed of fresh, chopped Romain lettuce. I steamed the lobster tails (out of shell) in a glass bowl in the microwave in 30 second increments until done.
This would be perfect for a gathering or picnic by keeping ingredients separate until ready to serve. 5 stars!

This was delicious!!! I love the fresh tarragon. I did tweak the recipe a bit. Instead of lobster, I used chilled snow crab and substituted the hot dog buns with crusty baked croutons from ciabatta bread. My family can’t wait to have it again!
Followed recipe really closely (omitted the avocado – I’m allergic) and it was absolutely amazing. The little bit of acid from the tomatoes and lemon balances out the richness of the brioche buns and lobster. The tarragon, scallion and bacon all do there part in making this a success. I would not change a thing. Stunningly good.

This is the best lobster salad I’ve ever had! It is a bit on $$$ but worth it. I will be trying with shrimp next time. Thank you Katie!
