Ladd’s Chopped Wedge Salad

Ingredients

  1. 4 slices bacon
  2. 1/2 head iceberg lettuce, chopped into wedges
  3. 1/2 cup grated “supermarket” mozzarella
  4. Italian Ranch Dressing, recipe follows
  5. Pinch freshly ground black pepper
  6. 1/2 cup mayonnaise
  7. 1/4 cup sour cream
  8. 2 tablespoons milk
  9. 2 tablespoons grated Parmesan
  10. 1 tablespoon jarred pesto
  11. 1 tablespoon sun-dried tomatoes packed in oil, chopped
  12. 1/2 teaspoon kosher salt
  13. 1/4 teaspoon freshly ground black pepper
  14. Zest and juice of 1 lemon

Instructions

  1. Fry the bacon in a skillet until crisp, about 7 minutes. Drain on a paper towel. Chop into small pieces.
  2. Arrange the chopped iceberg on a small platter, then sprinkle over the grated mozzarella and chopped bacon. Drizzle with the Italian Ranch Dressing and finish with the pepper.
  3. Combine the mayonnaise, sour cream, milk, Parmesan, pesto, sun-dried tomatoes, salt, pepper and lemon zest and juice in a food processor. Process until well combined.

The salad idea is great but, like other reviews, the winner here is the dressing.  You can adjust to taste (I add more tomatoes).  It is a really pretty, thick dressing that can also double as a quick dip, especially if you add a little more cheese.

This dressing is so good. I made this salad for dinner last weekend and then used the remaining dressing all week for my lunch salads. Making the dressing again today for this week’s lunches.
