Jicama and Avocado Salad

Ingredients

  1. 2 large oranges
  2. 2 limes, juiced
  3. 1/8 teaspoon ground coriander
  4. 1/8 teaspoon ground cumin
  5. Kosher salt
  6. 2 tablespoons olive oil
  7. 1 small to medium jicama, peeled and cut into thick matchsticks
  8. 1/4 cup thinly sliced red onion
  9. 1 medium avocado, sliced crosswise
  10. 2 tablespoons fresh cilantro leaves

Instructions

  1. Segment the oranges and cut each segment in half. Squeeze the juice from the oranges’ membranes into a bowl. Whisk in the lime juice, coriander, cumin, 1/2 teaspoon salt and olive oil.
  2. Gently toss the jicama, red onion and oranges with the lime vinaigrette and transfer to a serving bowl. Top with the avocado, cilantro and a sprinkle of salt.

I make this to go with our tamales, as she did on her show, but I was unsure if my husband would go for this salad so made rice also.  He said “he would try it” and then devoured it, barely even touching his rice!   He just asked me for the recipe to share with people he works with.  This is Seriously Delicious!

Bright, fresh, crisp and creamy!  Perfect anytime.  Right after the episode aired yesterday, I ran out and picked up some jicama and avocado to make this dish.  Absolutely love it! Could eat this every day.  And perfect to serve to your lactose concerned guests.
