Ingredients

  1. 1 head radicchio, cut into 1-inch pieces
  2. 1 large or 2 small endive, cut into 1/2-inch pieces
  3. 1 head Treviso or 1/2 other small radicchio, cut into 1/2-inch pieces
  4. 2 cups baby arugula
  5. 2 tablespoons extra-virgin olive oil
  6. 1 1/2 tablespoons fresh lemon juice (from 1 lemon)
  7. 1 teaspoon kosher salt

Instructions

  1. Combine the radicchio, endive, Treviso, arugula, olive oil, lemon juice and salt in a large bowl. Use your hands to toss the greens gently and coat them evenly with the dressing.

This is so easy to make! I cannot always find endive or treviso, so I make do with what I have.
This is great with filling meals, like chicken parmigiana when I serve with garlic bread or pasta. We get our greens in a light, delicious way without weighing anyone down!
