Herby Snap Pea and Radish Salad

Ingredients

  1. Kosher salt and freshly ground black pepper
  2. 1 pound snap peas, strings removed and cut in half vertically
  3. 1/2 cup Greek yogurt
  4. 2 tablespoon lemon juice
  5. 2 tablespoons chopped fresh dill
  6. 1 tablespoon chopped fresh chives
  7. 1 tablespoon chopped fresh mint
  8. 1 tablespoon vegetable oil
  9. 5 to 7 radishes, (about 1 bunch) cut into 1/3-inch-thick matchsticks

Instructions

  1. Bring a large pot of salted water to a boil. Once the water is boiling, add the snap peas and cook until the snap peas are bright green but still tender-crisp, 1 to 2 minutes. Transfer the snap peas to a bowl of ice water. Set aside.
  2. Add the Greek yogurt, lemon juice, dill, chives, mint, oil, 1 teaspoon salt and 1/2 teaspoon pepper to a large bowl and whisk to combine. Set aside.
  3. Drain the snap peas and add them to the bowl with the dressing. Add the radishes to the bowl and toss well to thoroughly coat the vegetables in the dressing.
  4. Serve immediately or refrigerate in an airtight container for up to 3 days.

Fabulous salad. I didn’t have yogurt, so I
used sour cream. Delicious.

Since I only cook for myself I really had to pare down the recipe. Forgot the chives but added some lemon zest and omitted the oil the lemon juice thinned the yogurt a bit and I didn’t want the extra oil. It was delicious. Very summery and light.

Yum!! A little labor intensive, but worth it. I eyeballed measurements on everything and opted for olive oil instead of veg oil and it’s so good!! I can tell it’ll be better the next day as well. Definitely going to make again

Very good and flavorful. Don’t use vegetable oil, it’s not good for you. Use olive oil or avocado oil.
