Herby Salad with Burrata

Ingredients

  1. 1/2 cup olive oil, plus more as needed
  2. Juice of 1 lemon
  3. 1/2 bunch fresh basil
  4. 1/2 shallot, roughly chopped
  5. Kosher salt and freshly ground black pepper
  6. 12 ounces arugula
  7. 1/2 bunch fresh chives, thinly chopped
  8. 1/2 bunch fresh mint, roughly chopped
  9. 1/2 bunch fresh parsley, roughly chopped
  10. Zest of 1 lemon
  11. 1 1/2 cups shelled spring peas
  12. 12 ounces burrata cheese, cut into large pieces
  13. Flaky salt, like Maldon
  14. Freshly ground black pepper

Instructions

  1. For the basil vinaigrette: Add the olive oil, lemon juice, basil and shallot to the carafe of a blender. Blend until the shallot is broken down and the ingredients are thoroughly combined. Taste and season with salt and pepper. Blend once more to combine the seasonings. Transfer to a serving vessel alongside the salad.
  2. For the salad: Add the arugula to a large serving platter. Sprinkle with the chives, mint and parsley. Then sprinkle with the lemon zest and peas. Distribute the burrata evenly on top. Sprinkle with the flaky salt and serve with the basil vinaigrette on the side.

Very good. Of course the herbaciousness is lovely but the real hero of this salad is burrata. Yum, yum, yum. This is a great salad to have with a heavy flavored or high fat dish.

These directions are poorly written. A half a bunch of this and that is meaningless. A bunch of Herbs from one store will not be the same amount in another and what about those cooks like myself who use herbs out of their herb garden? Please be more exact and say a tablespoon of chopped chives, for example.
