Herby Cabbage Salad

Ingredients

  1. 1/4 cup olive oil
  2. 2 tablespoons white wine vinegar
  3. 1 tablespoon whole-grain mustard
  4. 1 small shallot, minced
  5. Kosher salt and freshly ground black pepper
  6. 1 small head Napa cabbage, halved and cut crosswise into 1/2-inch strips
  7. 1 cup fresh flat-leaf parsley leaves, chopped
  8. 2 tablespoons finely chopped fresh chives
  9. 1 tablespoon finely chopped fresh oregano
  10. 2 teaspoons finely chopped fresh thyme

Instructions

  1. Stir together the oil, vinegar, mustard, shallots, 1/2 teaspoon salt and a few grinds of black pepper in a large salad bowl. Add the cabbage, parsley, chives, oregano and thyme and toss to coat. Let stand at least 15 minutes or refrigerate up to 24 hours before serving.

Love, this salad. It marries perfectly with the chicken thighs cooked in sherry. So easy, will make this meal over and over!

Loved the fresh ‘herby’ flavor of the salad.  I added some honey to the dressing to cut the sharpness of the mustard.  For crunch I added one diced, unpeeled apple.  Will definitely make again.

Made this last night and loved it!  I’m addicted to anything tart so this did the trick.  Had it with roasted salmon and the freshness of it was a perfect pairing with the richness of salmon.  Good for lunch today too!

The fresh ingredients and different take on cabbage salad are wonderful. I chose to add a tablespoon of honey to the dressing, which paired very well with the barbecued ribs I served it with. Can’t wait to try it with Valerie’s sherry vinegar chicken!

This was delicious, light and fresh. I added a little chopped celery and celery leaves along with a carrot peeled in ribbons. Kept everything else the same. Family loved it!

I absolutely loved this, I did use regular green cabbage because that is what I had and my vinegar was white wine vinegar with tarragon, I figured it would work since this is an herby cabbage salad…wow it’s a winner, I’m making it again tomorrow.  I think this would be really great for a bbq 🙂
