Ingredients

  1. 3 tomatoes, cut into wedges
  2. 2 yellow bell peppers, roughly chopped
  3. 1 English cucumber, sliced
  4. 1/3 cup tomato juice
  5. 1/4 cup extra-virgin olive oil
  6. 3 tablespoons sherry vinegar
  7. Kosher salt and freshly ground pepper
  8. 1 tablespoon minced fresh chives
  9. 1 shallot, thinly sliced Flaky sea salt

Instructions

  1. Toss the tomatoes, bell peppers, cucumber, tomato juice, olive oil and sherry vinegar in a large bowl; season with kosher salt and pepper.
  2. Sprinkle the salad with the chives, shallot and flaky sea salt.

I’ve made this so many times this summer and it’s always a hit.  I like to add some toasty croutons when serving, like a poor man’s panzanella.  So tasty!
