Ingredients
- 1 cup sugar
- Zest and juice of 1 orange
- 1 vanilla bean
- 4 pints strawberries, hulled and halved
- 2 pints blueberries
- 2 cups green grapes, halved
- 2 cups red grapes, halved
- Fresh mint leaves
Instructions
- Place the sugar, 1 cup water, orange zest, juice and vanilla bean in a small pan and stir to dissolve the sugar. Then bring to a boil. Turn the heat to low and simmer for about 15 minutes to thicken. Set aside to cool.
- Prepare all the fruit in a large bowl, pour the cooled syrup over the top and toss together. Decorate with mint leaves and chill until ready to serve.

I made this exactly as written, once with the dressing as a side dressing and once with all of the dressing poured over and mixed. If you let the salad sit with the dressing for an hour or so, IT IS PERFECT.
Delicious! Great recipe, but I had to add a lot more orange juice than called for. The syrup was too thick to pour over fruit. I added more than a cup or orange juice.
We added kiwi and raspberry and I only used a little bit of the simple syrup and reserved the rest of it for future fruit salads. We also used vanilla bean paste instead of vanilla bean because it was way cheaper. Overall we loved this!

This was very good. I replaced half of the strawberries with fresh pineapple. I also reduced the whole recipe by half (still used whole vanilla bean) and it still made a lot. I will be making this again.
I am almost addict for this. I have made it three times in 3 months. It is delicious and everyone loves it that tastes it. My husband isn’t a big fruit eater but he enjoys this. I always add fresh pineapple that I cut in small chunks. My 4 year old granddaughter had it for breakfast.
Amazing flavor in sauce. Some previous reviews complain of too much sauce makes dish runny or too sweet. Easy solution – put sauce in a separate dish and let people put on as much or as little as they want to their portion. This fruit salad is a game-changer!
