Fennel and Greens Salad

Ingredients

  1. 1/4 cup fresh orange juice (1 orange)
  2. 3 tablespoons white wine vinegar
  3. 1 tablespoon honey
  4. 1 tablespoon minced red onion or shallot
  5. 1/4 cup extra-virgin olive oil
  6. Kosher salt and freshly ground black pepper
  7. 2 cups thinly sliced fennel, plus 2 teaspoons roughly chopped fronds (1 small bulb)
  8. 1 cup thinly sliced breakfast radishes
  9. 2 oranges, cut into supremes
  10. 1 1/2 to 2 cups upland cress or other peppery salad green, such as watercress or arugula
  11. 1/2 cup roughly chopped roasted, salted pistachios
  12. 1/4 cup roughly chopped pitted Castelvetrano olives
  13. Kosher salt and freshly ground black pepper

Instructions

  1. For the orange vinaigrette: In a salad dressing shaker, combine the orange juice, vinegar, honey, red onions and olive oil; shake to combine. Season to taste with salt and pepper. Refrigerate until ready to serve. Make sure to shake the vinaigrette once again right before dressing the salad. (Reserve any extra vinaigrette in the refrigerator for up to a week.)
  2. For the salad: In a medium bowl, combine the fennel and radishes, breaking up any pieces that are sticking together. Add the orange supremes, upland cress, pistachios and olives and gently fold the ingredients together. Season with salt and pepper.
  3. Gently toss the salad with vinaigrette and garnish with fennel fronds. Serve immediately.

This was excellent! The dressing really toned down the power that fennel can offer. For those who aren’t fans of the fennel licorice taste, they will love this recipe. It’s the perfect blend of sweet, salty and a crunch. I’m going to serve it with salmon tonight!

Apparently I accidentally left a 1 star review. I didn’t mean to do that at all. This is so good!!! It’s lite, super crunchy and the orange vinaigrette is really tasty and refreshing. So easy to make. The olives and pistachios just add extra goodness.

I loved it. My husband came home w fennel and I thought “ what am I going to do with that?” This salad is easy to make, fresh and interesting. So many tastes- licorice from the fennel, peppery arugula, crisp radish all mellowed out by the orange. The orange vinegarette is wonderful.
