Ingredients

  1. 6 ears corn
  2. Olive oil, for brushing
  3. Kosher salt and freshly ground black pepper
  4. 3 Roma tomatoes, diced
  5. 3 green onions, sliced
  6. 1 red bell pepper, diced
  7. 1 jalapeno, sliced thinly
  8. 3 tablespoons olive oil
  9. Juice of 3 limes
  10. Kosher salt and freshly ground black pepper
  11. 3/4 cup fresh cilantro leaves, roughly chopped

Instructions

  1. For the corn: Prepare a grill for medium-high heat.
  2. Brush the corn with olive oil and sprinkle with salt and pepper. Grill until cooked and browned, about 10 minutes. Set aside to cool.
  3. For the salad: Add the tomatoes, onions, pepper and jalapeno to a bowl. Pour over the olive oil and lime juice, sprinkle with a pinch salt and pepper and toss.
  4. Cut the corn off the cobs, leaving some in shards, then toss gently with the salad, keeping the shards intact. Sprinkle over the cilantro leaves and gently mix in.

Run to the grocery store or produce stand and get the ingredients for this salad! This is a delicious accompaniment to tacos, enchiladas, sopes…anything Mexican or Tex Mex. I will make this again and add some creamy diced avocados.

Love, love this salad!! Even the grans loved it!! Used 1/2 lg red pepper, Maui (sweet) onion and one less lime. Grilled the jalapeño w/the corn, rubbed the peal off then chopped w/veins and seeds. Yummo!!!

Love this salad, but I add avacado, Mexican crumbling cheese, garlic and cumin. Delicious!
