Instructions

  1. Boil, peel and cube 2 pounds russet potatoes; toss with 2 tablespoons cider vinegar and 1/2 teaspoon salt. Mix 2 cups mayonnaise, 2 chopped scallions, 1 chopped celery stalk, 1 tablespoon each Dijon mustard and vinegar, 1 teaspoon sugar, and salt. Toss with the potatoes.

I love this potato salad, but the picture shows something red in it. Maybe red bell pepper?

This is a great classic recipe but I did make a few changes. Instead of more salt I added no salt seasoning & some celery salt. I prefer Guldens spicy brown mustard and I added some fresh basil & shaved carrots. I used 5 russet potatoes and some creamer baby potatoes with the skins on, terrific trio from the Little Potato Company. They are red, purple and white, gives it a colorful blend and creamy taste. Lastly, I cut the amount of mayo in half. It got rave reviews.

This is a great Potato Salad, very New York Deli and so easy. If you’re looking for strong potato salad, this not the one. Has a great soft flavor to accompany whatever you pare it with.

This was very easy and tasty..I did not use the mustard, scallions or celerly because no one in my family likes them. It was so good that my son that never eats potato salad ate this one!! I used golden potatoes instead of the russst becasue that is what I had on hand..Thank You!!

didn’t think it had a lot of taste. Added chives and more onion, and celery than was called for. Still didn’t think it had a lot of flavor. I have a better recipe using italian dressing and letting it marinate over night then adding the mayo. That recipe is much better and has a lot more flavor. Won’t make this again!!!!
