BLT Salad Bites

Ingredients

  1. 1/4 cup mayonnaise
  2. 2 tablespoons plain yogurt
  3. 1 teaspoon chopped fresh chives
  4. 1 teaspoon fresh lemon juice
  5. 1/2 teaspoon Dijon mustard
  6. Kosher salt and freshly ground black pepper
  7. 3 ounces pancetta, cut into small dice
  8. 1/2 cup cherry tomatoes, halved
  9. 2 tablespoons extra-virgin olive oil
  10. 1 tablespoon chopped fresh chives
  11. 1 teaspoon red wine vinegar
  12. Sea salt and freshly ground black pepper
  13. 2 to 3 heads Little Gem lettuce (about 16 leaves)
  14. 1/4 cup grated Parmesan

Instructions

  1. For the chive mayo: Mix together the mayonnaise, yogurt, chives, lemon juice, mustard, 1/4 teaspoon salt and 1/4 teaspoon pepper in a small bowl; set aside. (The mayo can be made a day ahead and refrigerated.)
  2. For the BLT salad bites: Saute the pancetta in a skillet over medium-high heat until crispy, 5 to 7 minutes. Transfer to a plate.
  3. Combine the tomatoes, olive oil, chives, vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Let sit for 5 minutes.
  4. Arrange the larger lettuce leaves on a serving platter. Spoon about 1 1/2 teaspoons of chive mayo onto the center of each leaf. Top with about 1 tablespoon of the tomato mixture and some crispy pancetta. Sprinkle with the Parmesan.

This is now a go to salad for us. It is so easy, packed with flavor and low cal if you watch the ingredients. I crave this salad!  I make it as is – and I normally like to add my own flare!

Made these for Christmas apps.  HUGE hit.  Remember to use a regular brand mayo, like Kraft, and a regular plain yogurt.  Don’t use Greek yogurt.  And avoid organic mayo or yogurt bcz they seem to be too runny.  

I cooked up a TON of the pancetta, sent it thru my food chopper to make it minced, and added a little of the dressing.  My lettuce cups contained a lot of the meat, half a cherry tomato, then topped off with the dressing and some parm cheese.  The recipe calls for shredded parm, but the picture shows shredded.  Either works well.
Like I said, HUGE hit.  And they were just as tasty at 3pm as they were at 6pm.
