Ingredients

  2. 2 cups cooked Wehani rice
  3. 1 cup finely diced crunchy celery
  4. 1 cup diced mango
  5. 1/4 cup finely diced red onion
  6. 1/2 cup packed cilantro, chopped
  7. Up to 1/3 cup dressing of choice made with olive oil, white wine vinegar and toasted chili powder
  8. Salt and freshly ground black pepper
