Big Wedge Salad with Smoked Brisket and Blue Cheese

This is a fun new take on a classic salad. This recipe takes on burger flavors in every which way and transforms it into a big hearty salad. A generous topping of local smoked brisket subs for bacon in this new classic.

Ingredients

  1. 2 ounces blue cheese, broken into chunks, plus more for garnish
  2. 3 ounces sour cream
  3. 1 ounce white balsamic vinegar
  4. 2 tablespoons honey
  5. 2 tablespoons minced fresh dill, plus more for garnish
  6. 2 tablespoons minced fresh parsley
  7. Kosher salt and freshly ground black pepper
  8. 2 heads Bibb, Baby Gem or iceberg lettuce
  9. 3 large beefsteak tomatoes, cut into wedges
  10. 3 pounds store-bought smoked barbecued brisket, cut into chunks
  11. 8 ounces cooked bacon pieces

Instructions

  1. In a large mixing bowl, combine the blue cheese chunks, sour cream, vinegar, honey, dill and parsley. Mix with a spoon, then season with salt and pepper and set aside.
  2. Cut the lettuces in half, and place on a plate. Add the tomatoes, then top with the dressing, brisket and bacon. Garnish with blue cheese and more dill.
