Instructions

  1. Whisk 3 tablespoons olive oil with 1 tablespoon each lemon juice and soy sauce in a large bowl. Add 1 bunch trimmed watercress, 4 ounces thinly sliced white mushrooms and 2 chopped avocados; season with salt and pepper and gently toss. Top with canned fried onions.
