Arugula, Radicchio and Parmesan Salad

Ingredients

  1. 8 ounces baby arugula
  2. 1/2 head radicchio, sliced thin crosswise
  3. 1 endive, sliced thin crosswise
  4. Lemon Vinaigrette:
  5. 1/3 cup freshly squeezed lemon juice
  6. 2/3 cup good olive oil
  7. 1 teaspoon kosher salt
  8. 1/2 teaspoon freshly ground black pepper
  9. 1/4 pound chunk of Italian Parmesan cheese

Instructions

  1. Place the arugula, radicchio and endive in a medium bowl.
  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour enough dressing on the salad to moisten. With a very sharp knife or a vegetable peeler, shave the Parmesan into large shards on top of the salad. Toss gently and serve immediately.

OMGosh, I made this salad tonight. It’s so good and is crazy easy to pull together. Literally less than 10 minutes. Enough for 4-5 people. The peppery kick of the arugula paired with the crispness of the radicchio and endive go really well together. Should have known it would be a big hit since Ina never seems to disappoint. I will always keep this vinaigrette in the fridge. It’s one of my new faves. Thank you, Ina, I’m a huge fan!
