Ingredients

  1. 1/2 cup crumbled goat cheese
  2. 1/2 cup mayonnaise
  3. 1/2 cup sour cream
  4. 1/4 cup finely chopped chives
  5. 1 Meyer lemon, zested and juiced
  6. 2 tablespoons orange blossom honey
  7. 1 tablespoon Champagne vinegar
  8. 1 1/2 teaspoon kosher salt
  9. 1/2 teaspoon fresh ground black pepper
  10. 1/2 head cauliflower, broken into big florets
  11. 6 organic carrots
  12. 2 red bell peppers, seeded, deveined and cut into cheeks
  13. 1 red onion, quartered, root end left intact
  14. 1/4 cup olive oil
  15. 1/2 teaspoon crushed red pepper flakes
  16. 1 teaspoons kosher salt
  17. 1 teaspoon fresh ground black pepper
  18. 1 celery root, peeled and julienned
  19. One 5-ounce package baby arugula
  20. 1/2 cup crumbled goat cheese

Instructions

  1. Preheat a grill to high.
  2. For the creamy goat cheese dressing: In a medium mixing bowl, combine the goat cheese, mayonnaise, sour cream, chives, lemon zest and juice, honey, vinegar, salt and pepper. Whisk together well to break up the goat cheese. Cover and refrigerate for 30 minutes prior to serving.
  3. For the salad: In a large mixing bowl, gently combine the cauliflower, carrots, bell peppers, onion, olive oil, red pepper flakes, salt and pepper. Char the vegetables on the grill on all sides, 6 to 8 minutes, removing the vegetables to a baking tray as done. Let cool. Cut the vegetables into a 1/2-inch dice.
  4. In a large mixing bowl, combined the charred vegetables and celery root. Pour the creamy goat cheese dressing over the top and mix together well. Put the arugula on a platter and top with the salad. Garnish with the crumbled goat cheese. Serve immediately.

I cannot believe no one has commented on this salad! I made it last night to go along with grilled chicken from (as we call him) the chicken guy. It is a stand on the side of Hwy 29 in Vallejo, Ca. BEST CHICKEN EVER deserves a great side, right? This salad hit the mark! You have to try it. The dressing was flavorful and yet refreshing. Thank you Thank you Thank you
