Creamy Italian Dressing

Ingredients

  1. 1/4 cup mayonnaise
  2. 2 tablespoons sour cream
  3. 2 tablespoons white wine vinegar
  4. 2 tablespoons extra-virgin olive oil
  5. 1 small clove garlic, minced
  6. 1/2 teaspoon dried oregano
  7. Pinch of sugar
  8. Kosher salt and freshly ground pepper
  9. 1 tablespoon chopped fresh parsley
  10. 1 tablespoon grated parmesan cheese
  11. 1 tablespoon grated pecorino romano cheese

Instructions

  1. Whisk the mayonnaise, sour cream, vinegar, olive oil, garlic, oregano, sugar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Stir in the parsley, parmesan and pecorino. Season with more salt and pepper. (The dressing will keep, refrigerated, up to 1 week.)

Absolutely love it.-I made it 2 days ago ( let it sit in the fridge for 1 day) then made my salad. THIS IS SERIOUSLY GOOD! ( didn’t use sour cream I forgot it.. will be making this frequently!

Even with red wine vinegar, I enjoy it. The only thing I don’t include is the parsley, because I so rarely use it.

Made with a few small deviations: I only had Parmesan cheese on hand, so doubled it and left out the Romano, used dried parsley rather than fresh, and added a bit more EVOO to cut some of the sour taste of vinegar (mus husband does not like sour), and it was a very refreshing change from our usual vinaigrette. Served on a large green salad with grated carrots, chopped cucumber, sliced tomatoes, garbanzo beans, thinly sliced red onion, radishes, and cubes of avocado (everything I had on hand,) which made a very refreshing salad. Will definitely make again.

Great dressing.  I added a bit more olive oil to thin it out a bit.
