Creamy Blue Cheese Dressing

Ingredients

  1. 6 ounces (about 1/3 pound) double cream blue veined cheese, softened to room temperature
  2. 1/2 cup heavy cream
  3. 1/2 cup sour cream
  4. Salt and pepper
  5. 2 pinches ground cayenne pepper

Instructions

  1. Mash softened cheese with fork in a bowl. Whisk in the cream and sour cream into cheese, the consistency should be smooth with an occasional small bit of blue. Season with salt, pepper, and cayenne pepper.

This is great! I love the simplicity of this recipe that really lets the blue cheese be the star. For a real treat try Roaring Forties Blue from a gourmet online source. This cheese is wonderful for dressings and on steaks or hamburgers. It has enough salt so that you need not add any. The cayenne in moderation is brilliant. Honestly, a dressing from this cheese I could eat by the spoonful. Serve it on your green salads or apple-walnut salad, or serve it with your crudite. I bet you will really love it.

This recipe has wonderful texture and bleu cheese flavor. The type and quantity of cheese you use is a big factor. If you find the flavor slightly bland, squeeze in some fresh lemon juice. It took mine from good to great.
