Ingredients

  1. 1/4 cup red wine vinegar
  2. 1 teaspoon minced shallots
  3. 1/4 cup plus 2 tablespoons canola oil
  4. 1/4 cup plus 2 tablespoons extra-virgin olive oil
  5. Kosher salt and freshly ground black pepper

Instructions

  1. In a medium mixing bowl, whisk together the vinegar, shallots and 1 teaspoon water. Slowly stream in the oils while whisking. Season with salt and pepper.

I could not wait to try this and it was excellent, then I changed it up and made Sunny’s Mascarpone- bacon dressing and it was FANTASTIC.  Love having the basic vinaigrette to build from.
