Avocado Goddess Dressing

Ingredients

  1. 1/3 cup mayonnaise
  2. 3 tablespoons finely chopped fresh mixed herbs such as basil, parsley and/or tarragon
  3. 2 teaspoons freshly squeezed lime juice
  4. 1 ripe avocado, chopped
  5. 1 scallion, thinly sliced
  6. Kosher salt and freshly ground black pepper

Instructions

  1. Put the mayonnaise, herbs, lime juice, avocado, scallion, 1 teaspoon salt and a few grinds of pepper in a blender. Puree until smooth. Adjust the seasoning with additional salt and pepper. Store the dressing in the refrigerator in a tightly sealed container for up to 2 days.
