Sour Cream Mashed Potatoes With Roasted Garlic, Dijon Mustard and Bacon

Ingredients

  1. 2 pounds whole russet or Yukon gold potatoes
  2. Kosher salt
  3. 1 stick softened butter or 1/2 cup extra-virgin olive oil
  4. 1 1/2 cups sour cream
  5. Freshly ground pepper
  6. 4 heads garlic
  7. 2 tablespoons dijon mustard
  8. 1/2 pound bacon, cooked and crumbled

Instructions

  1. Put the potatoes in a saucepan; cover with cold water and add 2 tablespoons kosher salt. Bring to a simmer over medium-low to medium heat and cook, uncovered, until tender, about 45 minutes. Drain the potatoes and let sit until just cool enough to handle, then peel and transfer to a bowl.
  2. Add the butter to the potatoes. Add the sour cream, 2 teaspoons kosher salt, and pepper to taste; mash with a potato masher or fork.
  3. Halve the garlic heads crosswise, put them on a sheet of foil and drizzle with olive oil; wrap and roast at 350 degrees F, 1 hour. Squeeze out the cloves; mash and stir into the potatoes. Fold in the mustard. Spoon the mashed potatoes into a serving dish and sprinkle with the bacon.

This mash potato recipe was delicious!! A 5 star for sure!. For 2lbs of potatoes I used 1 cup of sour cream. I used a combination of 3 Tbsp of butter and 1/8 to < 1/4 of olive oil. I used bacon crumbles purchased at Costco and then followed the recipe as stated. This recipe went well with a slow cooker sauerkraut pork loin recipe from all recipes.com. The pork loin was also purchased at Costco.

My favorite mashed potato recipe by far. My family and I made it for thanksgiving and have made it 5 times since then. We are about to use it again for fathers day. These potatoes are full of flavor, the Dijon mustard gives it a unique kick!
