Ingredients
- 4 pounds new potatoes, scrubbed, halved
- 2 heads garlic, cloves separated
- 4 tablespoons rosemary, chopped
- 1/4 cup olive oil
- Kosher salt and pepper to taste
Instructions
- Preheat oven to 400 degrees. In a large bowl, toss new potatoes and garlic cloves with rosemary. Toss with olive oil to coat lightly and add salt and pepper to taste. Lightly oil a sheetpan and spread potatoes out into one layer, cut side down. Roast for 30 to 45 minutes or until golden brown and tender. Remove from oven and let cool for 20 minutes before removing with a spatula. Serve hot or cold.

This has become a staple in my recipe repertoire
These amazed even myself! I loved the melody of flavors and I found these extremely simple to make. After I made these for my and my BF there were none left. We ate them all. I would make these again and again. This recipe is a common one, many different foodnetwork cooks have their own versions, which are very similar if not exactly the same. Ina Garten’s is delicious too. Try this, you will love it.
Made these exactly as directed with the exception of tossing the potatoes with the garlic mixture early in the day. (Did this to counter act the fact that my cut potatoes were starting to turn black.) Cooked them for 60 minutes instead of the suggested 45 minutes.EVERYONE LOVED the potatoes…there were none left.
Good, but not as fantastic as people make them out to be
These potatoes are a nice twist on your same ‘ole boring potatoes. I couldn’t stop eating them! Sad to say there where no leftovers!
I made these for my Easter dinner, which was a buffet. These potatoes were excellent and held up very well on the buffet in a crock pot. I plan on adding them to my Christmas Eve buffet this year.

This recipe was good. For even better results increase the roasting time. Also…the garlic does not integrate with the dish…should really mince or chop the garlic to better blend the flavors.
