Broccoli and Cashew Crunch

Ingredients

  1. 1/4 cup grated Parmesan cheese
  2. 1/4 cup salted cashews, lightly chopped
  3. Zest of 1 lemon
  4. 1/4 teaspoon garlic powder
  5. Kosher salt
  6. 1 pound fresh broccoli, florets removed and separated
  7. 2 tablespoons melted butter
  8. Freshly ground black pepper

Instructions

  1. Preheat the oven to 400 degrees F.
  2. In a small bowl combine Parmesan cheese, cashews, lemon zest, garlic powder, and pinch of salt, and set aside.
  3. Place the broccoli on a baking sheet. Drizzle with butter and toss. Season with salt and pepper, to taste.
  4. Roast in the oven until broccoli begins to caramelize, about 20 minutes. Remove, and toss the broccoli with the cashew mixture. Serve warm.

I made this last night and it was a huge success. I agree with Tricia I did not add all of the cashew topping. I sprinkled it in and used my own judgment, Would have been too dry. Other than that a big hit at the table.

I really love roasted broccoli. The cashew topping, in my opinion, was good but not outstanding. I might make it again w/ a lot less parmesan. Just pretty salty and overpowering.

My wife loves broccoli, but I am not a fan of it. I saw Sunny fixed this on TV the other day and decided to give it a try. It was quick and easy to do. I didn’t change anything in the recipe except the amounts because I was only fixing it for two. We both loved it and it is definitely a keeper.
