Ingredients
- 1/4 cup grated Parmesan cheese
- 1/4 cup salted cashews, lightly chopped
- Zest of 1 lemon
- 1/4 teaspoon garlic powder
- Kosher salt
- 1 pound fresh broccoli, florets removed and separated
- 2 tablespoons melted butter
- Freshly ground black pepper
Instructions
- Preheat the oven to 400 degrees F.
- In a small bowl combine Parmesan cheese, cashews, lemon zest, garlic powder, and pinch of salt, and set aside.
- Place the broccoli on a baking sheet. Drizzle with butter and toss. Season with salt and pepper, to taste.
- Roast in the oven until broccoli begins to caramelize, about 20 minutes. Remove, and toss the broccoli with the cashew mixture. Serve warm.

I made this last night for my husband. I have never roasted anything either so I was apprehensive about how it would come out. I actually enjoyed it. My husband also enjoyed it. I will probably make this again.
I just finished making this and I have to say I have never roasted anything and that broccli was not dry like i thought it would be. This will be made more often at my house.
I have made this a few times my family loves it! Make more than you think you need it will all get eaten!
I made this last night and it was a huge success. I agree with Tricia I did not add all of the cashew topping. I sprinkled it in and used my own judgment, Would have been too dry. Other than that a big hit at the table.
I really love roasted broccoli. The cashew topping, in my opinion, was good but not outstanding. I might make it again w/ a lot less parmesan. Just pretty salty and overpowering.
My wife loves broccoli, but I am not a fan of it. I saw Sunny fixed this on TV the other day and decided to give it a try. It was quick and easy to do. I didn’t change anything in the recipe except the amounts because I was only fixing it for two. We both loved it and it is definitely a keeper.
