Cannoli-Style Ricotta Toast

Ingredients

  1. 1 cup ricotta
  2. 1/4 cup powdered sugar
  3. Pinch kosher salt
  4. 6 slices seven-grain bread, grilled or toasted
  5. 1 blood orange, segmented
  6. 1 navel orange, segmented
  7. 1 ruby red grapefruit, segmented
  8. 1/2 cup pistachios, crushed
  9. 1 small bunch fresh mint leaves
  10. 1/2 cup honey

Instructions

  1. In a medium bowl, mix together the ricotta, powdered sugar and salt (if the ricotta has too much liquid, drain it before mixing in).
  2. Spread the toast with the ricotta mixture, then top with the citrus segments, then the pistachios and mint. Drizzle with the honey and serve.

I really love ricotta cheese in lasagna and manicotti I can’t wait to try it like this, when my Mom and Nana would cook Italian dinners and they would use ricotta I would always wait for them to turn around and take a spoon full of it and run in the other room and eat it all I just like it so much.
