Cheesy Rice Ball Fritters

Ingredients

  1. 1 shallot, finely chopped
  2. 2 cloves garlic, finely chopped
  3. 2 tablespoons butter
  4. 4 ounces ham steak, diced into chunks
  5. 2 cups cooked long-grain white rice
  6. 4 ounces cream cheese, room temperature
  7. 1/2 cup grated Parmesan
  8. 1/2 cup shredded mozzarella
  9. 3 tablespoons finely chopped parsley leaves
  10. Salt and freshly ground black pepper
  11. 1/2 cup all-purpose flour
  12. 3 eggs, beaten
  13. 2 cups panko bread crumbs
  14. Peanut oil, for frying

Instructions

  1. Preheat a deep-fryer to 375 degrees F.
  2. Saute the shallot and garlic with the butter in a saute pan over medium heat. Add the ham, cook until lightly crisp and then stir in the rice.
  3. Mix the ham mixture, cream cheese, Parmesan, mozzarella, and parsley together in a large mixing bowl. Season with salt and pepper, to taste. Roll the mixture into 2-inch balls and put on a baking sheet.
  4. Add the flour, beaten eggs, and panko to separate pie plates. Season the panko with salt and pepper. Roll the balls through the flour, then the egg and then the panko. Gently add the fritters to the deep-fryer and fry until golden and crisp, 3 to 4 minutes. Transfer the fritters to a serving platter and serve.

The flavor in these ceesy rice balls was off the hook, as Guy Fieri would say. My mistakes were on texture, sand they weren’t the Neely’s fault. I was trying to multitask, big mistake. I overlooked the rice in the microwave, which made it too firm, and when I added all the ingredients, I let it sit before shaping the balls because I wanted to get dessert in the oven and it  dried out. I couldn’t form balls; they were done for. So I doctored up my concoction with extra cream cheese and some half and half and it made a great mock risotto! Hubby made sure I stored the leftovers instead of throwing them away, so thanks, Pat and Gina for your terrific flavor profiles! I’m very sorry things didn’t end well for you two but you certainly both can cook.

I made these for a party. It was a hit!!! I used red onion instead of the shallot and swiss cheese for the mozzarella. I liked the flavor of the swiss better. They were so good.

This recipe is amazing! I watched them make it and knew I had to try it. I’m not a ham lover so I left that part out, used onion instead of shallot, and added some chopped green onion. Very good! Will definitely be making these again!

made these as a side dish for dinner one day My two young boys couldnt get enough!!! Just the right crunch on the outside with a gooey cheesy center!!! I used bacan instead of ham and onion instead of shallot but it was still good!!! Will definitely be making theses again soon!!! yum thanx Neelys!!!!!!!!!!!

These are really good! I used 8 oz. of ham pieces and chopped half of the green section of a bunch of spring onions. Will definitely make again. Great for a football game.

Yes I was afraid to make this dish. I have been out of work do to medical reason, and have became a FOODNETWORK addict, and my family said ok another dish, see I have been making different recipes evrynight some they like, some I’m sad to say we don’t,especially my husband Mr.pickey,But he loved the fritters he said I think this is a keeper. WOW..But I must say I added more onion and other spices recommend on other reviews.

First of all, I love you two! The energy between you is so positive! I just finished making the fritters and am eating them now. They are so good! It’s the first time I’ve used panko breading and peanut oil! They make me feel like I’m at a restaurant! They are crunchy, warm, and cheesy! The ham, shallots and garlic blend wonderfully! I can see making these for a party! The only difference that I made was using basmati rice instead of regular white rice, because that is what I had cooked for a previous meal! Excellent!!!
