Instructions

  1. Toss 1 1/2 pounds halved radishes with 2 tablespoons olive oil, 1 teaspoon chili-lime seasoning and 1/2 teaspoon kosher salt on a baking sheet. Roast at 425 degrees F, stirring once, until golden and tender, 30 to 35 minutes. Season with salt. Toss with 1 cup cilantro. Top with roasted salted pepitas.

Alternative because of dieting, I used red pepper flakes instead of chili-lime and Pam Olive Spray instead of oil. And no nuts. Very good!!

Excellent and easy. Great way to be surethose radishes in the fridge don’t go to waste, and nice accompaniment to many Mexican meals (fresh radishes are oftrn used as a key garnish in great Mexican cooking; this riffs a bit on that.) Love it.
