The finest chicken wing recipe is this one. Considering how little ingredients are used, it’s quite excellent. At a football party, I served it for the first time, and everyone quickly devoured the five pounds of wings.

Ingredients

  1. cooking spray
  2. ½ cup vegan butter, melted
  3. ½ cup coconut sugar
  4. ¼ cup brown sugar
  5. 2 cups mashed bananas
  6. ½ cup plain applesauce
  7. 2 cups all-purpose flour
  8. 1 teaspoon baking soda
  9. ½ teaspoon baking powder
  10. ¼ teaspoon salt
  11. ½ cup chopped walnuts (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan with cooking spray.
  2. Combine butter, coconut sugar, and brown sugar in a large bowl; beat with an electric mixer until smooth and creamy, 2 to 3 minutes. Stir in mashed bananas and applesauce until well blended.
  3. Combine flour, baking soda, baking powder, and salt in a separate bowl. Add banana mixture, stirring just enough to moisten. Fold in walnuts. Pour batter into the prepared loaf pan.
  4. Bake in the preheated oven until a toothpick inserted into center of the loaf comes out clean, 60 to 65 minutes. Let bread cool in the pan for 10 minutes, then turn out onto a wire rack.
  5. If you are not vegan, you may use butter in place of vegan butter.
  6. Brown sugar may be substituted for coconut sugar, if desired.

tired of banana bread so I added unsweetened coconut and some drained crushed pineapple for half of the applesauce. Results were spectacular, moist tender bread with a flavorful twist!

This is a great option for those who are baking gluten free and vegan-which can be tricky. I found this took longer to bake and it was still gummy and raw-ish when I cut into it. Back in the oven it went. All better now and good flavor.
