Ingredients

  1. 1 tablespoon butter
  2. 4 large eggs
  3. 1 cup white sugar
  4. 1 cup mashed strawberries
  5. 1 cup mashed bananas
  6. 1 cup strawberry yogurt
  7. ½ cup rolled oats
  8. ½ cup canola oil
  9. ½ cup applesauce
  10. ½ teaspoon vanilla extract
  11. 3 cups all-purpose flour
  12. 1 teaspoon baking soda
  13. 1 teaspoon ground cinnamon
  14. ½ teaspoon salt
  15. ¼ teaspoon ground nutmeg
  16. 1 cup chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease two 8.5×4.5-inch loaf pans and one 5.75×3-inch mini loaf pan with butter.
  2. Lightly beat eggs in a large bowl with an electric mixer. Add sugar, strawberries, bananas, yogurt, oats, oil, applesauce, and vanilla and beat until well combined. Let sit for 5 minutes to soak oats.
  3. Add flour, baking soda, cinnamon, salt, and nutmeg to the strawberry-banana mixture, beating just until combined. Stir in walnuts. Pour batter into the prepared pans.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 40 minutes for mini loaf and 1 hour for larger loaves.
  5. If you warm the strawberries in the microwave, they will be easier to mash and the warmer batter will soak the oats faster.

This bread came out great. Nice flavor and is moist and slightly chewy. The sweetness is just right. I cut the recipe in half and made one 9×5 loaf; it took 50 minutes to bake. The edges are a bit dark, but not burned. I used vanilla yogurt instead of strawberry and unsweetened applesauce.
