For Christmas gatherings and special events, I make these tea-time biscuits. They are adored by all. One of my family’s favorite snacks is these!

Ingredients
- nonstick cooking spray
- 2 ½ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ¾ cup white sugar
- ½ cup unsalted butter, softened
- ¾ cup sour cream
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 3 medium ripe bananas, mashed
- 2 cups strawberries, diced
- 1 cup chopped nuts
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×5-inch loaf pan with nonstick spray. Line a baking sheet with parchment paper.
- Sift flour, baking soda, cinnamon, and salt together into a bowl.
- Cream sugar and butter together in a large bowl. Mix in sour cream, eggs, and vanilla. Add mashed bananas and mix until combined. Gradually mix in dry ingredients. Fold in strawberries and nuts. Pour into the prepared pan and set on the lined baking sheet.
- Bake in the preheated oven until golden brown and a toothpick inserted in the center comes out clean, 65 to 80 minutes.

Wasn’t sweet enough for us.
First off, I’m really bad at following recipes, because I follow my taste buds… I loosely measured all ingredients at about 1.33 of the original. I swapped out the sour cream for lemon Greek yogurt, which I love and had in the fridge. I made a 5 X 9 loaf and 4 jumbo muffins. I liberally sprinkled cinnamon sugar over the top, as well. I cooked the muffins about 30 minutes, and the loaf about 65 – 70 minutes. I live at about 5000 ft above sea level. They came out FANTASTIC!!
