Instead of oats, bran is used to make these oat bran muffins. I’ve been making these for over five years and I adore them. They taste fantastic whether cooked with regular applesauce, cinnamon applesauce, or cranberry applesauce. They’re a hit with my daughter, and I hope you do too!

Ingredients

  1. 1 ½ cups oat bran
  2. 1 ½ cups all-purpose flour
  3. ½ cup dark brown sugar
  4. 2 teaspoons baking powder
  5. 2 teaspoons baking soda
  6. ½ teaspoon salt
  7. 1 cup chilled applesauce
  8. 2 large eggs
  9. ¼ cup vegetable oil

Instructions

  1. Preheat the oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  2. Blend together oat bran, flour, brown sugar, baking powder, baking soda, and salt in a large bowl. Add chilled applesauce, eggs, and oil; mix until well blended. Spoon batter into the prepared muffin cups. Let stand for 10 minutes.
  3. Bake in the preheated oven until golden brown and a toothpick inserted into the center of muffins comes out clean, about 15 minutes.
  4. Fold in 1 cup plumped raisins and 2 tablespoons raisin water into batter before baking.
  5. Sprinkle a mixture of sugar and cinnamon over tops of muffins before baking.
  6. Add 1 teaspoon cinnamon or nutmeg to flour mixture.

I made these muffins this morning and my husband and I each ate 3! I read the reviews so I changed a few things that people were saying they were dry. I added 1 can of peaches and the juice smashed with a fork along with 2 cups of applesauce. Also about 4 TBS of honey and 3 eggs instead of two! They are so soft and yummy I can’t believe these are healthy just WOW!

I have made these many times. YUMMY. I modified to get to 3 WW points. Substitutions: 1/4 cup Brown blend Splenda,2 TBSP oil and fill to 1/4 with non fat yogurt. I always use dates. They are still very delicious.

I made these with Bob’s Red Mill 1 for 1 gluten free flour, and oat bran from our local Bulk Barn. After reading the comments here, I added a half cup of plain Greek yogurt and a teaspoon of cinnamon to the batter. Just had one fresh from the oven and it was delicious. Next time I’ll add dates or raisins.

This recipe, as posted, comes out dry and bland. I made it and can see how it has promise, but in order to make these muffins a win, I will need to increase moisture (somehow, milk? oil?) and flavor (cinnamon? sugar? choco chips?). Kind of frustrating to see such a highly rated recipe, when essentially it’s nothing without the add-ons.

These turned out perfect! I made my own applesauce for the recipe as well. Added a bit of dark and milk chocolate chips. Attached a photo to show how perfectly they came out of the silicone liners.

I love this recipe! I love bran and needed to add some fiber to my diet and I am lactose intolerant so I appreciate no milk in this recipe. I read the other suggestions so I added 2 bananas, substituted a little fiber supplement and flax into the flour mixture, some cinnamon and a tablespoon of honey. There was plenty of moisture. I sprinkled brown sugar on top prior to baking. They are perfect!

Used many previous suggestions. Added cinnamon, and nutmeg, buttermilk 3/4 c, and increased oil to 3/4 c. Added 1 c raisins, 1/2 cu walnuts. Don’t care about calories, just want good tasting muffins!

I have made these for a long time. I have added many different things to this over the year to try. But everyones favorite is when I add two medium very ripe bananas. I typically reduce the applesauce down a little when I do. I almost always add cinnamon also.

I used 1 c. white whole wheat flour and 1 c. whole wheat pastry flour, 1 tsp b. soda, 1 tsp b. powder. 1/3 c. oil. I added 1/3 c. milk because the batter was too dry. The level of sweetness is perfect.

I used 1/3 c apple sauce and 3 very ripe squished bananas, wheat flour instead, 1/2 tsp cinnamon with flour mix.Then I made 1/3 c brown sugar,1/3 c flour 1/4 cup butter cut together in a crumble to top muffins before baking. In my oven I baked for only 10 minutes. probable because I changed things up a bit. It came out good and more “bran” like. thanks for recipe!

I am wondering if there isn’t an ingredient missing? When I combined the dry materials it was VERY dry. I had to add a cup of milk to make it workable. And I see that other recipes for oat bran muffins had a cup of milk included as a rule.

These are delicious! I was looking for ways to add my fiber to my diet and this is too good to be true! I like a little larger muffin, so my recipe made 8. I sprinkled tops with about 1/3 tsp of cinnamon sugar. Bake for 22 minutes at 400 ( since the muffins are larger). Yummy.

I had a lot of ingredients around I wanted to use up, with oat bran being my starting point. But I changed things up a bit–mainly because of all the other ingredients I wanted to use up, too–and the muffins still turned out great. I shared them with my neighbors, and they also like them. Changes I made: I used two cups of Red Mill whole grain sorghum flour (it’s gluten free) instead of wheat flour, I zapped almost a cup of dried cranberries covered in orange juice in the microwave for a minute and a half to reconstitute them a bit and then drained them, I added a cup of sliced almonds and a small handful of chocolate chips, I added an extra egg, I added two tablespoon of soft butter to the batter, and because the batter was a little dry I poured about a 1/4 cup of the orange juice into it (that I had soaked the cranberries in). I know my wife will like them tomorrow morning because they aren’t sweet.

Did not have apple sauce so I substituted a cup of banana and added 1 cup of raisins. Was very good, I’ll make these again.

These are great! I didn’t have eggs or applesauce, so substituted some mashed bananas and plain yoghurt, and they came out so soft and yummy Will definitely make them again. Might add some more spices next time.

Added 1/4 c wheat germ, 1Tbsp of buttermilk, 1Tbsp of molasses since I used light brown sugar, 1 Tbsp cinnamon, 1tsp Vanilla, and 1/2 cup of dried cranberries. That made it a more interesting flavor.
