One day I decided to cook some hamburgers for my wife, who doesn’t consume beef. My father used certain ingredients in his burgers, therefore I spontaneously came up with this recipe for grilled turkey burgers. They immediately won my wife over! I initially assumed it was a fluke, but when I made them for my wife’s friends at gatherings, everyone else agreed! Delicious and swift!

Ingredients

  1. 1 ½ cups all-purpose flour
  2. ½ cup whole wheat flour
  3. 1 ¼ cups white sugar
  4. 1 tablespoon ground cinnamon
  5. 2 teaspoons baking powder
  6. ½ teaspoon baking soda
  7. ½ teaspoon salt
  8. 2 cups grated carrots
  9. 1 apple – peeled, cored, and chopped
  10. 1 cup raisins
  11. 1 egg
  12. 2 egg whites
  13. ½ cup apple butter
  14. ¼ cup vegetable oil
  15. 1 tablespoon vanilla extract
  16. 2 tablespoons chopped walnuts
  17. 2 tablespoons toasted wheat germ

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly oil 18 muffin cups, or coat with nonstick cooking spray.
  2. In a medium bowl, whisk together eggs, egg whites, apple butter, oil and vanilla.
  3. In a large bowl, stir together flours, sugar, cinnamon, baking powder, baking soda and salt. Stir in carrots, apples and raisins. Stir in apple butter mixture until just moistened. Spoon the batter into the prepared muffin cups, filling them about 3/4 full.
  4. In a small bowl, combine walnuts and wheat germ; sprinkle over the muffin tops.
  5. Bake at 375 degrees F (190 degrees C) for 15 to 20 minutes, or until the tops are golden and spring back when lightly pressed.

These turned out great! I substituted apple sauce for the apple butter, and flax seeds for the wheat germ.

Great recipe, especially the addition of so many carrots that you barely taste!! I now use it as kind of a base recipe and experiment with adding ingredients based on what I have and what will increase the health value (habit of adding too many things to recipes). With that disclaimer I often sub applesauce for apple butter, use very little sugar, sub Craisins, and replace a portion of the flour with some mixture of oats, flax seed, chia seeds and/or protein powder. You could also sub a bit of mashed banana (about 1/2) for the oil if you wanted.

Made the recipe with a few changes. Had zucchini which needed to be used up, so shredded it instead of the carrots. Reduced the oil & the sugar by half and replaced it with my homemade apple butter. The muffins were nice and moist & not too sweet. Family enjoyed them for breakfast.

Very good! I reduced the sugar to 3/4 cup and used apple sauce instead of apple butter (couldn’t find any) and they turned out very good and definitely sweet enough for us.

I can’t get enough of these muffins! I did not have applesauce, so used the apple butter and oil as written, although next time I may try the applesauce. I threw the wheat germ in with everything else as suggested by someone, substituted craisins for the raisins, and added about one half cup of sweetened flaked coconut.

Quite delicious, a morning glory for breakfast, indeed =) Only change: just kept the nuts and wheat germ inside the muffins, not on top…just sprinkled a little sugar there. oh and didn’t have apple butter, so replaced it with natural yogurt, turned out perfect too (well, yogurt makes it all taste yumm anyways! =)

These are divine!! My boys will eat the entire recipe (if I let them) in just a couple of hours. I add some ground flax or flax seed, whichever I have on hand to make them have more goodness. 🙂

I used shredded sweet potato instead of carrots and apple sauce instead of apple butter (because it’s what I had on hand). I baked in mini loaf pans for about 25min. It came out fantastic and the littles loved it!

These would be great as is but for my own preference I used all white wheat flour. 1 cup of brown sugar instead of the white. Didn’t use the topping just chopped nuts and added in. I usually shake a bit of cinnamon sugar over my muffins anyway. Have made twice and my coworkers loved them.

OMG! So good. I made them twice and everyone loves them. I did make a couple changes: instead of 1 1/2cups all-purpose & 1/2 cup whole wheat flour I did… 1cup all-purpose flour & 1cup whole wheat flour. I also did 1/4 cup unsweetened applesauce & 1/4 sweetened applesauce instead of 1/2 cup unsweetened. So yes I played with the recipe a bit and it was AWESOME! I’m sure it would be just as good if you did follow the recipe (unlike me). But this recipe deserves infinite stars. And you can’t even tell they are healthy. Plus they aren’t oily like the store bought ones (I find the store bought and drive thru ones are more like cake and very oily ??)

These were even better than I hoped! I did make some substitutions because of what was and was not in my pantry. I used all white flour, subbed dried cranberries for the raisins and used canned pumpkin instead of apple butter. Next time I might add a dash of ginger, too . . . but these were gone within 12 hours of leaving the oven, so there’s no need to try and improve them! Just delicious!
