We experimented with baking a muffin that was naturally sweetened without any added sugar and discovered the ideal comfort meal! It’s a wonderful fruity blend that has been sweetened with blueberries and orange juice concentrate.

Ingredients

  1. 1 ¾ cups all-purpose flour
  2. ¾ cup rolled oats
  3. 1 teaspoon baking powder
  4. ½ teaspoon baking soda
  5. ½ teaspoon salt
  6. ¼ teaspoon ground nutmeg
  7. ⅔ cup vegetable oil
  8. ½ cup orange juice concentrate, thawed
  9. ¼ cup water
  10. 1 egg, beaten
  11. ¼ teaspoon vanilla extract
  12. 1 cup frozen blueberries

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
  2. Mix flour, rolled oats, baking powder, baking soda, salt, and nutmeg together in a large bowl. Combine vegetable oil, orange juice concentrate, water, egg, and vanilla extract in a separate bowl.
  3. Stir oil mixture into flour mixture; mix until batter is smooth. Fold in blueberries; stir until combined. Spoon batter into prepared muffin cups.
  4. Bake in the preheated oven until golden and cooked through, about 17 minutes. Cool in the pans for about 1 minute before removing.
  5. Milk can be substituted for the water if desired.

This recipe actually should have 2 teaspoons powdered milk added to the dry ingredients. It adds a creamier texture. Sorry we left that out when we posted the recipe.

It was doughy and bitter it had almost no sweetness but i fallowed the recipe exactly
