Ingredients
- ¼ cup butter, softened
- ⅛ cup white sugar
- ⅛ cup brown sugar
- ½ cup applesauce
- 6 tablespoons Grade A maple syrup
- 1 egg
- ½ teaspoon vanilla extract
- ½ cup all-purpose flour
- ½ cup chopped walnuts (Optional)
- ½ cup quick-cooking oats
- ¼ cup whole wheat flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Line a muffin tin with paper liners.
- Combine butter, white sugar, and brown sugar in a large bowl; beat with an electric mixer until creamy. Add applesauce, maple syrup, egg, and vanilla extract; mix well.
- Combine flour, walnuts, oats, whole wheat flour, baking powder, baking soda, cinnamon, and salt in a separate bowl. Add to the butter mixture, stirring just until all ingredients are moistened.
- Spoon batter into the prepared muffin cups, filling each 2/3 full.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 15 to 18 minutes. Allow to cool in the tin for several minutes before removing.

Great muffin recipe, I made a few tweaks. Exchange the applesauce for spiced peach jam. Halve the maple syrup. Use all muscovado sugar for an added molasses flavour. Use 1 egg + 1 yolk. Make sure the butter is very soft, or melt it first on low. Blend wet ingredients well, and mix dry ingredients in slowly and incorporate well. So good! Lovely muffins, great texture, full of flavour.
Really good and moist. Will be making it again.
