Ingredients
- 2 ½ cups wheat bran
- 1 ½ cups sifted all-purpose flour
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 eggs
- 1 ½ cups nonfat plain yogurt
- ½ cup white sugar
- ¼ cup molasses
- 2 ½ tablespoons unsweetened applesauce
- ½ cup chopped raisins
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease 18 muffin cups or line with paper muffin liners.
- Whisk wheat bran, four, baking soda, and salt together in a bowl. Beat eggs in another bowl. Add yogurt, sugar, molasses, and applesauce to eggs; whisk until smooth. Stir bran mixture and chopped raisins into yogurt mixture until no dry lumps remain. Spoon batter into prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 20 minutes. Cool in the pan for 10 minutes before removing to a wire rack to cool completely.

I liked it as a jumping off point, but I did modify it quite a bit. I increased the fat content (I used full fat yoghurt, plus I added sour cream). I doubled the applesauce plus I added 1/3 c of apple butter and used dark brown sugar instead of just white (both). I also added 2 tsp cinnamon & 1/4 tsp cloves. I plumped the raisons in apple cider. So it’s almost a different recipe by now, this being my third iteration. I do appreciate getting the rough proportions of bran to flour, but I did not like it without the addition of fat, so I can’t call it “healthier bran muffins! I definitely like the addition of spices and apple butter, too.
I like it. I feel that it needs a little more moisture and definitely more raisins. I’ll make it again and add another egg and double the raisins.
I didn’t like this recipe at all. cooked for 10 mn less then directions said and still came out dark and dry. also barely made 11 small muffins. would not make again.
Great I used Bran flakes, wheat flour and vanilla yogurt I sub the sugar and used additional applesauce
Yum! I didn’t use any sugar, instead using 1/2 unsweetened applesauce plus the amount called for. I used Plain Greek yogurt since it’s what I had on hand and I had to substitute chopped dried apricots for the raisins but I made no other changes. The recipe is wonderfully moist and the dried fruit adds a nice bit of sweet. This is a great no-sugar recipe to have on hand, thanks for posting it!
