Ingredients
- 2 cups all-purpose flour
- 2 ½ teaspoons baking powder
- ¼ teaspoon ground nutmeg
- ¾ cup white sugar
- ¼ teaspoon grated orange zest
- 2 eggs
- ¼ cup butter, softened
- 1 cup milk
- ¼ cup raisins
- ¼ cup poppy seeds
- 2 cups rolled oats
Instructions
- Preheat oven to 400 degrees F (200 degrees C). Grease 6 muffin cups or line with paper muffin liners.
- In a mixing bowl, mix flour, baking powder, nutmeg, sugar, and orange peel. In a separate bowl, mix eggs, margarine, and milk.
- Stir flour mixture into the wet ingredients until just moist. Stir in raisins, poppy seeds, and oats; mix well. Spoon batter into prepared muffin pan; fill muffin cups about 3/4 full.
- Bake in preheated oven for 20 minutes, until a toothpick inserted into center of muffin comes out clean. Serve warm.

They were easy to make and baked quite well. However, they needed a little more sweetness. maybe an icing or something would help.
Definitely needs more moisture in the batter… I thought it needed more flavor so doubled up on a number of the flavor ingredients so the flavor was definitely very good but still to dry… I will try it again with more moisture components… I want this recipe for my version of this recipe to work because I love poppyseed and I wanted to make it healthier with rolled oats as part of the ingredients… I did mill my rolled oats so it was more like rolled oats flour
I won’t make these again. They were very heavy and dry, and they didn’t have much flavor. Adding lemon or almond flavoring may help with the flavor, but they would still be dry.
