This recipe recreates a traditional Christmas dish that my mother used to prepare every year. Bread freezes successfully.

Ingredients

  1. 2 cups all-purpose flour
  2. 1 cup white sugar
  3. ½ cup brown sugar
  4. 1 ½ teaspoons baking powder
  5. 1 teaspoon baking soda
  6. ½ teaspoon salt
  7. ¼ cup butter
  8. ¾ cup orange juice
  9. 1 egg, well beaten
  10. 1 teaspoon vanilla extract
  11. 1 tablespoon grated orange zest
  12. 1 ½ cups cranberries
  13. ½ cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9×5-inch loaf pan.
  2. Sift flour, white sugar, brown sugar, baking powder, baking soda, and salt together in a large mixing bowl. Mash butter into the flour mixture with a pastry cutter until the mixture resembles coarse cornmeal.
  3. Stir orange juice, egg, vanilla extract, and orange zest together in a small bowl; add to flour mixture and stir just until the dry ingredients are moistened and batter-like. Fold cranberries and walnuts through the batter; spoon into the prepared loaf pan, spreading so the corners and sides are slightly higher than the center.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
  5. When doubling recipe, use 3 eggs instead of just 2.
