Chocolate Chip Pecan Muffins

Because they contain whole wheat flour and are made with pudding, these chocolate chip and pecan muffins are a little healthier.

Ingredients

  1. 1 cup all-purpose flour
  2. 1 cup whole wheat flour
  3. ½ cup white sugar
  4. ½ cup brown sugar
  5. 1 (3.5 ounce) package instant vanilla pudding mix
  6. 1 tablespoon baking powder
  7. ½ teaspoon salt
  8. 1 cup milk
  9. ⅓ cup vegetable oil
  10. 1 egg
  11. ¾ cup semisweet chocolate chips
  12. 1 tablespoon all-purpose flour
  13. 4 ounces chopped pecans

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease a 12-cup muffin tin.
  2. Combine 1 cup all-purpose flour, whole wheat flour, white sugar, brown sugar, pudding mix, baking powder, and salt in a large bowl. Beat milk, oil, and egg together in a separate bowl. Stir into flour mixture until combined.
  3. Coat chocolate chips with 1 tablespoon flour and fold into the batter. Fold in pecans. Fill muffin cups 3/4 full of batter.
  4. Bake in the preheated oven until a toothpick inserted into a muffin comes out clean, 18 to 20 minutes. Cool in the tin briefly before removing to a wire rack to cool completely.
  5. Use any flavor pudding mix you prefer. I’ve tried vanilla, cheesecake, lemon, and chocolate, and they are all good so far.
  6. Decrease baking time to 12 to 14 minutes for mini muffins.
