Cakes look beautiful when decorated with this French buttercream frosting. Before serving, you must allow it to come to room temperature because it becomes hard when refrigerated. With this recipe, you cannot produce flowers. I make birthday cakes for my family using this recipe every time.

Ingredients

  1. 2 cups all-purpose flour
  2. 1 teaspoon baking soda
  3. ½ teaspoon salt
  4. 1 cup white sugar
  5. ½ cup butter, softened
  6. 2 large eggs
  7. 2 teaspoons vanilla extract
  8. 2 ripe bananas, mashed
  9. 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 3 mini loaf pans.
  2. Mix flour, baking soda, and salt together in a medium bowl.
  3. Beat sugar and butter with an electric mixer in a large bowl until light in color and fluffy.

  5. Add eggs, one at a time, mixing well after each addition. Stir in vanilla extract; beat in mashed bananas.

  7. Add flour mixture a little at a time, beating until just combined into a thick batter. Fold in blueberries until evenly distributed.

  9. Pour batter into the prepared loaf pans.

  11. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Cool in the pans for 10 minutes, then transfer loaves to cool completely on a wire rack.

I used one large 9” loaf pan and added cinnamon. I used olive oil instead of butter. Turned out good.

I made it in a 9×5 loaf pan since I don’t have the minis. Added 2 tsps of baking powder, 2 tsps of cinnamon ( COVID killed my taste buds) a handful of walnut pieces, and 2 tsps of vanilla bean . 2 tablespoons of flax seed meal. Cooked at 350 f for 1 hour. Perfect. Moist, flavorful for my jacked up tastebuds and quick to prepare. I did use parchment paper instead of greasing the pan. Personal preference. Will definitely make this again. I personally double the recipe and bake one large loaf and three minis. In my household we like the full sized slices and even let some dry and make french toast with it. (fabulous!) Then I can give the three small loaves away. Friends and family request it!!

Added walnuts and cooked two minis and one small loaf pan. Minis were 40 minutes and loaf was 45 minutes. I think a half to one teaspoon of baking powder would be a good addition.

The bread came out fluffy and moist! I tried it for the first time and it’s excellent! I did somehow made these changes: 1. 1 cup AP flour + 1 cup oat flour instead of 2 cups of AP flour. 2. 1/2 cup of brown sugar + 1/4 cup of white sugar instead of 1 full cup of white sugar (still it came out very sweet so I suggested to reduce it even more. 3. Added 1 spoon of whole fat milk 4. Buttered 2 regular aluminum baking foil pans and dusted brown sugar + cinnamon powder at the bottom and at the top of the bread (highly recommended!) 5. Coated the blueberries with flour so that it won’t sink 6. Added chopped walnuts for some crunch and 1 medium banana slices for topping decoration 7. It definitely took over 45 minutes to bake it, I guess every oven is different.

Very easy to bake! It turned out very fluffy and light, if that’s what you want. I halfed the recipe and cooked it for 25 minutes (cook 30 to 35 since I like it a bit raw) and it turned out perfect! I added my own chocolate chips and it tasted fantastic! I will be making this again! 😀
