Ingredients

  1. 1 (10 ounce) package frozen chopped spinach, thawed and drained
  2. ¼ cup all-purpose flour
  3. 2 eggs, beaten
  4. ½ teaspoon paprika
  5. ½ teaspoon onion powder
  6. ½ teaspoon garlic powder
  7. salt and ground black pepper to taste

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 6-cup muffin tin.
  2. Mix spinach, flour, eggs, paprika, onion powder, garlic powder, salt, and black pepper in a bowl; divide evenly between prepared muffin cups.
  3. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.

I made this recipe for the first time last night. I used fresh spinach and sauteed it in a tiny bit of oil first, and ended up with 9 oz, which worked out fine. I followed the recipe for all the other ingredients, oven times and temp. I thought they were delicious! If I add anything I’ll add nutmeg because it’s an ingredient in creamed spinach. Perhaps using fresh spinach was the key, but I thought they were easy and tasty.

I doubled the amount of all the spices and it turned out pretty well. They taste worse more an hour after cooking, so I’d recommend eating these right after baking.

I made the following modifications: substituted 1/2 cup green onions instead of onion powder, doubled the paprika, upped the salt & pepper, and added 1 tbsp garlic paste. This was an easy, great way to incorporate spinach into your diet.

I wanted spinach balls tonight. I had seen this recipe and thought it would be similar, especially if I made them as mini muffins rather than regular size. I’m glad I did. I really think this recipe could benefit from extra herbs like sage, thyme, and basil. I also wish it had had an amount for the salt. I added salt, but not enough. I enjoyed these tonight as a side but in the future will use my personal spinach ball recipe over this one.

These tasted very much like spinach. I even added a bit of feta, but the spinach overpowered it. Next time, I will try with maybe a 1/2 of flour and some chopped garlic instead of the powder… that might make a difference.
