Ingredients

  1. 1 cup white sugar
  2. ½ cup butter
  3. 2 large eggs
  4. 3 ripe bananas, mashed
  5. 2 cups all-purpose flour
  6. 1 teaspoon baking soda
  7. 1 teaspoon baking powder
  8. ½ teaspoon salt
  9. ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9×5-inch loaf pan.
  2. Cream sugar and butter in a large bowl with an electric mixer on medium speed until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix in mashed bananas. Sift together flour, baking soda, baking powder, and salt in a separate bowl; beat into banana mixture just until combined. Fold in nuts. Pour batter into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted into the center of the loaf comes out clean, about 1 hour.

I changed the flour out for gluten-free oat flour, very moist and light in texture. Best gluten-free banana bread ever. 350′ for 68 mins in convection oven.

Absolutely wonderful in every way. So simple my wife was amazed. I used just a little less sugar although some may not want that.I had to take out a little earlier though. Around 55 min not an hour but that’s my oven probably. I’m going to try as another person said whole wheat flour and brown sugar next time. Not traditional i realize but what the heck.

I was blown away by the lightness of this bread! While it had a heft when I pulled it from the oven, the first bite I took was so incredibly airy. My changes were: whole wheat flour instead of AP, brown sugar instead of white, and some vanilla extract, cinnamon, and nutmeg. Absolutely delicious and a perfect accompaniment to teatime!

I doubled the recipe and made two loaves. I added about 1/2 cup of ground flax seeds in place of 1/2 cup of the flour. I did not add nuts because my family doesn’t like them and I added about 2 extra bananas but they weren’t very large so it was fine. I also used 1 cup of coconut sugar and 1 cup of regular white sugar. I baked the two loaves for 70 total minutes. It turned out DELICIOUS!!

I add chocolate chips. Works great as mini loaves or muffins. Takes about 25 minutes to bake that way.
