Ingredients

  1. 2 eggs
  2. 1 cup white sugar
  3. ½ cup butter, melted
  4. 1 cup mashed bananas
  5. ½ teaspoon almond extract
  6. 1 ½ cups all-purpose flour
  7. ½ cup flaked coconut
  8. 1 ½ teaspoons baking powder
  9. ½ teaspoon baking soda
  10. ½ teaspoon salt
  11. ½ cup chopped walnuts
  12. ½ cup maraschino cherries, chopped

Instructions

  1. Mix together flour, coconut, baking powder, baking soda, salt, chopped walnuts, and cherries.
  2. Break eggs in a mixing bowl, and beat until light and frothy. Add sugar and melted butter or margarine. Beat well. Stir in mashed banana and flavoring. Add flour mixture, and stir just to combine. Spoon into greased 9x5x3 inch loaf pan.
  3. Bake at 350 degrees F (175 degrees C) for 1 hour, or until a toothpick inserted in center comes out clean. Let stand for 10 minutes, and remove from pan. Cool.

Great flavor. Followed recipe as written. I doubled the recipe as I had more bananas needing used. I used my glass bread pans instead of my metal ones an d it ran out of the pan a little so will not do that again. You do need to let the loaves cool down before removing from the pan or they will stick to the bottom. I will make this recipe again!

Used chopped macadamia nuts instead of walnuts because I had them. And banana, coconut, and macadamias seemed like they belonged together. With me. In Maui. If only. Walnuts and cherries seemed more like a banana split to me. Three mashed bananas made about 1 cup. The loaf smelled amazing as it was baking.

I made it exactly per the recipe, and it’s a perfectly tropical loaf perfect for Summertime (or anytime)! Don’t skip the cherries. It keeps a normally banal bread festive! Yes, you could modify this to no end, but it’s lovely just as it is (or with some deliciously softened butter). Thanks for a great recipe and experience!

This was really great! I’m not a coconut fan, but my husband is, so I made it for him and we both liked it. The flavors blended perfectly! My only concern is that it came out a little dry. Maybe I’ll try to cut baking time by 5 or 10 minutes next time. I have also thought about adding some mini chocolate chips to layer another flavor.

I made this last night!!! Definitely scrumptious in every bite!!! This was easy to make and came out of the oven looking beautiful, but I only needed to bake this at 350 for 50 minutes instead of the 60 minutes that the recipe said., but I think it was because I have an electric stove.

I made this one time so far, and it was quickly devoured! I used only 3/4 cup sugar(combo of raw sucanat and turbinado), and it was plenty sweet enough. I used 3 bananas (that had been previously frozen), which was a bit more than 1 cup. I also had frozen strawberries on hand, so thawed and used them instead of cherries. I will make again soon!

This banana bread is so moist. My husband and daughter loves it. The two things I did differently was add 1/2 teaspoon of banana extract and omitted the cherries. Great recipe!

This is a really good alternative to a plain banana bread. I did make one substitution. I used frozen cranberries instead of the cherries. One thing I would change is to eliminate the almond flavoring because I think it overpowered the flavor of the coconut.

I made this exactly as recipe suggested, except that I doubled the recipe. Loved the coconut cherry flavours together. I gave one of the loves to a friend and she and her family loved it also. Making it again today, but will not be giving any away!! I will also make a doubled recipe and taking it to my mother-in-laws at Christmas to have with coffee during gift opening Christmas morning. She is 94 and loves to try new recipes. Great flavour and will definitely make it again!!

I love banana bread, but not sugar and flour. I used 1/4 cup honey and 1/3 cup pineapple tidbits instead of the sugar. And I used coconut flour 3/4 cup, instead of reg. flour. I also lined my pan with parchment paper and lowered temp to 300 and baked 70 min. It was perfect.

Delish! I had a couple of overripe bananas and instead of throwing them away….VOILA… delicious banana bread. No cherries and brown sugar instead of white yeilded a beautiful loaf. Thanks for the recipe!

Used brown sugar rather than white, about 3/4 cup. Did not add cherries or nuts. Also browned the butter which gives it a beautiful nutty flavour. Really nice loaf! Everyone loved it!
